Which dish you meet depends on which corner of the region you are standing in.

The French call it the Sud-Ouest, and this corner of French cuisine was built by farms, not chefs. Ducks and geese were fattened for foie gras, which left farmers with more legs and breasts than they could eat fresh, and a great deal of fat. So they preserved the legs in that fat, cooked nearly everything else in it, and left the olive oil to the Mediterranean. Bouillabaisse and ratatouille get lumped in with southern France, but they belong to Provence. Across this region of France, the pantry is beans, cabbage, pork and walnuts, and a board without charcuterie, rillettes or pâté looks half finished.

Local ingredients decide the plate, which is the whole idea of terroir: cross a county line and the same dish tastes different, and the menu tells you where you are.

A quick map of where the main dishes belong, and when they are at their best:

Dish

Where it belongs

Best time

Cassoulet

Castelnaudary, Toulouse and Carcassonne

Autumn and winter

Confit de canard

The Dordogne and Gascony

Year-round

Foie gras

Périgord and the Gers

Year-round

Marennes-Oléron oysters

The Charente-Maritime coast

Year-round

Farci charentais

The Charente

Autumn and winter

Black truffle

Périgord

Winter

Canelé

The Gironde

Year-round

Bayonne ham

The Basque Country

Year-round

Which traditional dishes in South West France are worth ordering?

Cassoulet, the Slow-Cooked Bean Pot

Cassoulet is the most famous French dish to come out of the region: white beans, Toulouse sausage, pork and preserved duck legs under a crust, left through hours of slow cooking until the pot turns into something thicker than any stew. Castelnaudary, Toulouse and Carcassonne each claim the original, and locals will argue the point for an entire lunch. Order it in autumn or winter. In July it is a heroic choice.

Duck Confit, Tender Inside and Crisp Outside

Duck confit, or confit de canard, is the leg cooked in its own fat until the meat falls from the bone, then crisped in the pan. It comes with pommes sarladaises, potatoes fried in duck fat with garlic and parsley, and that pairing made the dish’s reputation.

Magret, Seared and Served Pink

The skin is the point with magret, the duck breast scored and rendered crisp. Order it medium rare, as you would a steak, and you will understand why the region stays so loyal to it.

Foie Gras, the Dish That Divides the Table

Foie gras is rich and unapologetic, and not everyone will want it. Most of it is duck foie gras, though goose is also made. If you are curious, order a small portion of terrine on toast with chutney and a glass of sweet Sauternes or Monbazillac, the classic pairing.

Garbure, the Soup That Ends With Wine

Every family has its own traditional recipe for garbure, a thick soup of cabbage, beans, vegetables and preserved meat. The ritual finish is faire chabrot: you pour a splash of wine into the last of the broth in your bowl and drink it straight from the bowl.

Much of this cooking was perfected in Périgord, and we cover that corner in more depth in our guide to what Périgord is famous for.

What do people eat in Charente and the Dordogne?

The Charente is inland, but its coastal neighbour, Charente-Maritime, supplies the seafood on its tables. Marennes-Oléron oysters are the pride of that coast, best eaten with brown bread and Charentes-Poitou butter. Mouclade, the mussel dish of the same coast, comes in a creamy sauce often made with Pineau des Charentes and a hint of saffron.

In the Charente itself, farci charentais, a stuffed cabbage, is best in autumn and winter, and Charentais melon owns the summer. Galettes charentaises (buttery biscuits) and a glass of Pineau or cognac finish the meal.

The Dordogne, across the border, is built on walnuts, black truffle, cèpes and strawberries, from the salade périgourdine to sobronade, a slow pork and bean stew, with a small goat’s cheese called cabécou to finish. Red Espelette pepper gives Basque dishes a gentle heat, and strings of it hang to dry on village house fronts each autumn. Finish with gâteau basque, a tart filled with pastry cream or black cherry jam, or with Ossau-Iraty, a sheep’s cheese often served with the same jam.

What are the more unusual dishes in South West France?

Nothing on a bird goes to waste here. Gizzards (gésiers) are a staple of local salads, small and chewy and far better than they sound. Stuffed goose neck, or cou d’oie farci, is a farmhouse classic that looks alarming and tastes like a rich terrine.

Across the Charente, snails are called cagouilles and cooked in the local style with garlic and herbs.

None of these are dares. Locals order them without thinking.

Not every table has the same appetite for the adventurous end of the menu, and children are the first to say so.

What are some traditional South West France dishes suitable for children?

Many children will pass on the heavier classics, but the region is kinder to small appetites than its reputation suggests. Pommes sarladaises are, to a seven-year-old, the best chips they have ever eaten. Omelettes, ham, melon and strawberries go down easily too, a grilled saucisse is a safe bet, and a menu enfant is standard.

At Manoir de Longeveau, a family-run estate on the Charente and Dordogne border, the family-friendly facilities give children room to burn off energy before a long lunch.

What can you eat in South West France aside from duck?

Quite a lot, with a little planning, though the region is meat-heavy.

Vegetarians do best with piperade, the Basque stew of peppers, tomato and onion, topped with an egg. It usually arrives with Bayonne ham on the side, so say so when you order. In autumn, a wild mushroom omelette is the simplest great lunch in the region. A warm goat’s cheese salad turns up on most brasserie menus.

Near the Atlantic, seafood and grilled fish are easy to find, and Bazas beef and locally raised poultry are reliable alternatives.

Read menus carefully, though. A salade often comes with gizzards or lardons, the region’s classic cabbage soup is made with preserved meat, and pommes sarladaises are fried in animal fat. At a farm inn, a vegetarian plate usually means an omelette, a salad without the meat and a few sides, so ask when you book. A polite “sans viande” or “sans canard” when ordering saves a surprise.

What is a typical breakfast in South West France?

Breakfast is small and sweet. The traditional French breakfast is built around bread, so expect coffee or hot chocolate with a tartine, a slice of baguette with butter and jam, or a croissant from the boulangerie. Gîtes and hotels often add yoghurt and fruit, but cooked breakfasts are less common, which leaves plenty of appetite for the long lunch ahead.

What does a typical lunch look like in South West France?

Lunch is the main event. Many restaurants serve from around noon until two, then close the kitchen until the evening, so turning up at 2.30 is a recipe for a sandwich.

The best value is usually the menu du jour or formule, a fixed-price lunch of two or three courses built around what is in season. For the most local meal, look for a ferme-auberge, a farm inn serving its own produce on a set menu, common in the Dordogne.

French gastronomy earned UNESCO recognition in 2010 for the gastronomic meal, a festive meal with an apéritif and at least four courses. A weekday menu du jour is a lighter version. Finish with coffee and, if nobody is in a hurry, a small glass of Armagnac, the brandy of Gascony.

Where should you eat traditional food in South West France?

Match the dish to the kind of place. For the slow-cooked classics, choose a family-run auberge over a café on the main square, where the menu is built for passing trade. Eat oysters at the oyster huts along the Charente-Maritime shore, and order the entrecôte at a traditional brasserie.

Look for gizzards and other unusual dishes on a chalkboard menu in a small bistro, and treat a laminated menu in four languages as a warning. Buy canelés and gâteau basque from a bakery that bakes its own, and pick up Bayonne ham and Espelette pepper at a village market.

What should you buy at a South West France market?

Markets are a quick way into French regional food. In the south Charente, Aubeterre-sur-Dronne holds a Sunday morning market and Chalais a larger one on Monday mornings. Across the Dordogne border, Ribérac hosts the largest market in the Périgord every Friday morning. Check the day with the tourist office before you drive, because market days can change.

Go before 10am and look for stalls where the grower or producer is selling their own goods. Build a picnic from walnuts, cabécou, cured ham, whatever fruit is in season and a bottle of local Pineau.

What is impolite to do when eating in France?

Very little is offensive, and a “bonjour” when you walk in and an “au revoir” when you leave covers the biggest courtesy.

Bread sits on the tablecloth beside your plate, and you tear it. Wait until everyone is served, and for the host’s “bon appétit”, before you start. Keep your hands visible above the table.

Do not expect the bill to arrive on its own, because lingering is encouraged. Ask for it with “l’addition, s’il vous plaît”. Service is already included in the price, so a few coins left behind are a thank-you, not an obligation.

How do you plan a South West France food trip?

Pick one or two bases and give each area a full day. The traditional food of South West France changes every hour or so of driving, and you will eat better than if you tick off ten towns. Manoir de Longeveau’s self-catering gîtes, a five-minute drive from Aubeterre-sur-Dronne, make a practical base for exploring the Charente and the Dordogne.

Check the month before you book, because what to eat in South West France shifts with the season. Strawberries peak in late spring, and the heavier dishes belong to the cooler months. Build one tasting at a domaine into an afternoon, and book dinner ahead in July and August.

If you would rather see it from the road, our guide to the food stops on a South West France road trip links them with the scenery between.

Order what the farm next door produces, and you will rarely go wrong.

The traditional food of South West France comes down to duck, beans and fat, with oysters on the coast and truffles inland.
